My moms Bolognese style meat sauce (ie. comfort food to me)

This is a super simple sauce to make and puts any canned one to shame! I’m a firm believer that lasagna is only as good as it’s sauce, so lets just say that this sauce makes a wicked lasagna ( recipe coming soon!) Mmmm, I’m getting hungry.

1 1/2-2 med. onions

4 cloves of garlic

1 kilo ground beef

2 lg. cans of tomato sauce

1 lg. can tomatoes

1 tbsp. oregano

1 tbsp. basil

2 tbsp. good quality balsamic vinegar

1. Saute onions in a little bit of olive oil. Cook until they’re transparent and getting soft. Add the diced garlic (or use a garlic press) and sauté a few more minutes.

The secret ingredient to make the sauce nice and rich. Balsalmic Vinegar!

2. Add the ground beef ( you could also use turkey) and cook until it’s not pink anymore and a little brown. Drain off any excess oil.

Look who’s waiting for a handout…

3. Add the tomato sauce, tomatoes, basil, oregano. and balsamic vinegar. *The last time I made this I accidentally bought crushed tomatoes rather than diced tomatoes. It was much thicker and a little gummy. I don’t recommend it!

4. Let it simmer for a couple of hours uncovered. Stir with a wooden spoon every few minutes to make sure it’s not sticking to the bottom of the pot.

You are a good kitchen learner!!! This sauce is also really good with ground bison and very good for you as it has much less fat than beef.
    Cheers Mom

Yumm! Balsalmic in tomato sauce? It seems so obvious (balsalmic and tomato is such a great combo) but never occurred to me. Can’t wait to try this! I’m trying hard to go meatless as often as possible and I think this one will taste just as good without the beef—I’ll let you know. (Although, if I could get bison, I would try that. Maybe ground reindeer?)

Michele, this would be completely good without the meat but reindeer???? What about Rudolph the Red Nosed meatsauce. How politically incorrect is that? We could freak out kids world wide.

Rudolph, Bambi…. I’ll take it all!

You guys are cracking me up. Do you guys not eat reindeer in Canada? What about moose? Both are semi-normal menu items here. Very sustainable, I believe.

Michele, moose-yes. Elk-yes. But reindeer… not really? Venison (you know, Bambi) is a yes too. I love wild game, but don’t get nearly enough of it!
